Here is what i am doing I have lost 14 pounds since April 16th.
DO eat lots of fiber, whole grains, fruit, veggies, lean meats (no beef or red meat) And drink lots of water
DONT eat enriched flour or rice. Stay away from saturated fats, high fructose corn syrup, sugar and trans fat.
Splurge once a week. But get back on track.
EXERCISE:
about 4 times a week if you're a begginer. about 30 to 45 minutes of any type of cardio (running, walking, jogging, dancing, swimming, skating, machines like elliptical etc) and do very light weights for toning so you build muscle and burn more calories.

This also is my goal before returning to college fall semester. I am a vegetarian and have been one for more than twenty years. I find we vegetarians take in too many carbs this tends to keeping many of us slightly over-weight. Over the years I've learned to keeping my carbs on the low side and increasing my proteins and vegetables. You will find that the weight melts off if you can lower your carbohydrates such as bread, crackers, grains. Increase fresh vegetables eating them with a protein and using fruits, herbal teas, herbal diet soda with natural low calorie sweeters such as xyitol to fight and satify sugar cravings. Exercise and drink all the water you want and along with me we will go back to school 20lbs lighter. I almost forgot veggie options you requested...vegetables are fun I love them roasted, baked, steamed, stewed and raw. Soups are filling and comforting and can be very low in calories. A sandwhich filled with salad greens , avacados, mushrooms, onions, olive oil and garlic is slimming and delicious. There are end less possibilities with vegetables because of the many varieties I feel you will never get bored if you try new dishes. A vegetarian cook book will give you new ideas in your eating experience. Best wishes!
I would start by using some slim fast to replace a meal or two. Then get to the gym and get a personal trainer.
Burn more calories that you take in. You WILL lose weight.
